Baked Salmon Sushi Cups

These sushi cups are an easy variation of the sushi bake trend, only more snackable. Six quick steps and you've got a delicious meal.

 

 

    Ingredients

    1 pound salmon, skin removed and cubed

    2 tablespoons gluten-free soy sauce or coconut aminos

    2 tablespoons kewpie mayo

    ½ cup cooked rice

    2 sheets Gimme Seaweed Sushi Nori, each cut into 4 squares

    Garnish with sesame seeds and green onions

    Instructions

    1. Preheat oven to 400°F and have a 6-cup muffin tin ready to fill.

    2. In a large mixing bowl mix soy sauce or coconut aminos and mayonnaise.

    3. Add cubed salmon and toss to coat well then set aside.

    4. Cut Gimme Seaweed Sushi Nori in half then in half again to make smaller squares.

    5. Add about 1 tablespoon of rice to the center of each nori square and place into a muffin cup. Top with 1-2 tablespoons of marinated salmon, making sure to spoon a little marinade over top. Repeat for all 6 muffin cups.

    6. Bake at 400° for 15 minutes then broil 1 minute at a time until salmon is golden.

    7. Remove from oven, sprinkle with sliced green onions and sesame seeds then enjoy warm!
