Shrimp “Ceviche” Bites With Seaweed

DIRECTIONS

  1. Bring large pot of water to a boil, then add shrimp and cook for 1 minute. Put immediately into a bowl of ice water to stop the cooking.
  2. Chop strained, cooled shrimp into small bite-sized pieces and mix with lime juice, orange juice, diced grapefruit, diced oranges, and lime zest. Cover and let marinate for 30+ minutes.
  3. When ready to serve, mix in remaining ingredients and serve with gimme Roasted Seaweed Snacks and avocado.
  4. Add a slice of avocado and a spoonful of ceviche to a sheet of gimme and eat like a little taco!
