Ingredients

  • 1-pound raw shrimp, deveined and shells removed
  • ½ cup lime juice
  • ½ cup orange juice
  • 1 pink grapefruit, peeled and diced
  • 2 oranges, peeled and diced
  • Zest of 1 lime
  • ½ cup diced cucumber
  • ¼ cup diced red onion
  • 1 jalapeño pepper, seeds removed, minced
  • ¼ cup roughly chopped cilantro leaves
  • ¼ teaspoon sea salt
  • ⅛ teaspoon freshly ground black pepper

Instructions

  1. Bring large pot of water to a boil, then add shrimp and cook for 1 minute. Put immediately into a bowl of ice water to stop the cooking.
  2. Chop strained, cooled shrimp into small bite-sized pieces and mix with lime juice, orange juice, diced grapefruit, diced oranges, and lime zest. Cover and let marinate for 30+ minutes.
  3. When ready to serve, mix in remaining ingredients and serve with Gimme Roasted Seaweed Snacks and avocado.
  4. Add a slice of avocado and a spoonful of ceviche to a sheet of Gimme and eat like a little taco!
