Seaweed Green Goddess Pasta Salad

Ingredients

1 8 oz. pack of Goodles Loopdy-Loos (or your favorite pasta)

1 tablespoon avocado oil

1 pack of Gimme Seaweed Avocado Oil Roasted Seaweed Snacks

1 ripe avocado

1 cup Italian parsley

1 cup spinach

1 cup cilantro

½ cup Greek yogurt

⅓ cup chives

Juice from ½ lemon

¼ cup water

1 teaspoon sea salt

4-6 radishes, sliced

½ cup cooked peas

¼ cup crumbled feta cheese

¼ cup shelled pistachios

2 tablespoons micro greens or micro herbs or chopped herbs

Instructions

  1. Cook Goodles according to pack instructions, strain, toss in avocado oil, and let cool.
  2. Meanwhile, in a food processor blend until smooth: Gimme Seaweed, avocado, parsley, spinach, cilantro, Greek Yogurt, chives, lemon juice, water, and sea salt.
  3. To serve, toss cooled pasta with 1-2 cups of dressing then top with radish, peas, crumbled feta, pistachios, and fresh herbs.
