Ingredients

  • 1 8 oz. pack of Goodles Loopdy-Loos (or your favorite pasta)
  • 1 tablespoon avocado oil
  • 1 pack of Gimme Seaweed Avocado Oil Roasted Seaweed Snacks
  • 1 ripe avocado
  • 1 cup Italian parsley
  • 1 cup spinach
  • 1 cup cilantro
  • ½ cup Greek yogurt
  • ⅓ cup chives
  • Juice from ½ lemon
  • ¼ cup water
  • 1 teaspoon sea salt
  • 4-6 radishes, sliced
  • ½ cup cooked peas
  • ¼ cup crumbled feta cheese
  • ¼ cup shelled pistachios
  • 2 tablespoons micro greens or micro herbs or chopped herbs

Instructions

  1. Cook Goodles according to pack instructions, strain, toss in avocado oil, and let cool.
  2. Meanwhile, in a food processor blend until smooth: Gimme Seaweed, avocado, parsley, spinach, cilantro, Greek Yogurt, chives, lemon juice, water, and sea salt.
  3. To serve, toss cooled pasta with 1-2 cups of dressing then top with radish, peas, crumbled feta, pistachios, and fresh herbs.
