Ingredients

1 cup cottage cheese

½ small raw beet, chopped

1 tablespoon lemon juice

½ clove garlic

1 sheet of Gimme Avocado Oil Roasted Seaweed Snacks, minced

1/8 teaspoon lemon zest

¼ cup chickpeas

To serve each:

sourdough bread, toasted

½ an avocado, sliced

3 thin slices watermelon radish

5 sheets of Gimme Avocado Oil Roasted Seaweed Snacks, thinly sliced

white sesame seeds

Instructions

  1. In a food processor, blend cottage cheese, beet, lemon juice, garlic, Gimme Seaweed, and lemon zest until smooth.
  2. Add chickpeas and blend until your desired consistency.
  3. Spread about ½ cup of the beet mixture on a piece of toasted sourdough then top with avocado, watermelon radish, sliced Gimme Seaweed, and a sprinkle of sesame seeds. Enjoy!
