Ingredients

Egg Bites

  • Nonstick spray
  • 6 large eggs
  • 3 tablespoons water
  • ½ teaspoon sea salt
  • ¼ teaspoon white pepper, optional
  • ½ - 1 cup of your favorite cheese, shredded or crumbled (we used cheddar)
  • 1 pack Gimme Avocado Oil Roasted Seaweed Snacks, chopped
  • ½ cup quartered cherry tomatoes
  • ⅓ cup finely chopped green onions

Instructions

  1. Preheat oven to 350°F and spray a nonstick 6-tin muffin tin with nonstick spray.
  2. Whisk together eggs, water, salt, and white pepper if using.
  3. In greased muffin cups, divide remaining ingredients among cups.
  4. Top with egg mixture about ¾ of the way up then bake for 18-22 minutes until toothpick comes out clean.
  5. Use a silicone spatula to go around the edges of the egg bites and pop them out while still warm.
  6. Let cool and refrigerate for up to 7 days to enjoy as an easy breakfast or protein snack. To heat up once cooled, microwave for 30-45 seconds depending on your microwave and enjoy!
  7. If desired, top with your favorites to make it even more delicious and satisfying!
