Chicken Meatballs

Mmm…meatballs. When done right, it’s a comfort food like no other: hot from the oven, with brown crispy bits and just the right tender bite. We made this winning dish even better, sneaking in some greens and lightening it up with chicken instead of beef. Try different flavors of GimMe to change up the umami profile: teriyaki or wasabi will give your dish some zing! Oh, and did we mention they freeze and reheat well? Prep a big batch to enjoy anytime: it’s a delicious time-saver!

Ingredients

1 small onion, roughly chopped

2 garlic cloves, roughly chopped

4 packages of Roasted Seaweed Snacks – any flavor

1 pound of ground chicken

1 tsp course sea salt

½ tsp freshly ground pepper

Instructions

  1. Place all ingredients into a large bowl, and mix thoroughly with hands, then roll mixture into 1 inch balls.​
  2. Place the uncooked meatballs on a foil lined sheet pan and bake at 400 degrees for about 25 – 30 minutes, until golden brown and cooked through. Times may vary based on size of meatballs and your oven, so ensure doneness by using meat thermometer; temp should reach 165 F.​
  3. Add a sprinkle of parsley, then serve and enjoy!
