Shrimp and cucumber boat with gimme sea salt seaweed snack.

Ingredients

  • 1 English cucumber
  • ½ pound raw shrimp, peeled and deveined
  • 1 tablespoon cooking oil, we used avocado oil
  • 1 teaspoon lemon pepper
  • ½ teaspoon paprika
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon sea salt
  • 1 pack Gimme Seaweed Roasted Seaweed Snacks, we used Sea Salt  
  • 1 ½ cups cooked white rice
  • 3 tablespoons mayonnaise
  • 2-4 teaspoons sriracha, depending on how spicy you like it!
  • 1 tablespoon minced chives, optional

Instructions

  1. Cut cucumber in half horizontally, scoop out the seeds, then cut each half into 2 pieces to make 4 “boats.”
  2. Toss shrimp with oil, lemon pepper, paprika, garlic powder, and salt.
  3. Preheat air fryer*, arrange shrimp in a single layer in the basket, then air fry at 400°F for 4 minutes shaking the basket halfway through.
  4. Meanwhile, mix together mayo and sriracha until combined.
  5. Layer in each cucumber boat 2 sheets of Gimme Seaweed, 3 tablespoons rice, about 3 shrimp, then drizzle with spicy mayo and sprinkle with optional chives. Enjoy!
  6. *If you don’t have an air fryer, cook the shrimp in a hot, oiled pan for 2-3 minutes on each side.
