Ingredients

½ pound raw sushi-grade ahi tuna

2 cups cooked white rice

½ English cucumber, cut into half moons

1 avocado, sliced

½ cup mango, cut into cubes

1 pack of Gimme Avocado Oil Roasted Seaweed Snacks

1 teaspoon sesame seeds 

For the marinade

¼ cup soy sauce (or gluten-free tamari)

2 tablespoons rice vinegar

2 teaspoons sesame oil

2 teaspoons honey

1 teaspoon garlic, minced

1 teaspoon ginger, grated

For the spicy mayonnaise

¼ cup mayo

1-2 teaspoons sriracha, based on your spice preference

Pinch of sea salt

Instructions

  1. Cut tuna into bite sized pieces and stir together with marinade ingredients in a medium bowl. Let sit 5-10 minutes.
  2. Stir together the spicy mayonnaise ingredients and add to a plastic bag with the end cut off.
  3. Assemble two bowls by dividing the ingredients among them. First fill your bowl with rice, then top with little piles of marinated ahi tuna, cucumber, avocado, mango, Gimme Seaweed, and any extra marinade if you like it saucy.
  4. Drizzle with spicy mayonnaise, sprinkle with sesame seeds, and enjoy!
