Ingredients

  • 2-4 large eggs
  • 4 cups water
  • 1 small clove garlic, smashed
  • ½ inch fresh ginger, sliced
  • 3 tablespoons white or yellow miso paste
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 tsp rice vinegar or apple cider vinegar
  • 2 packs ramen noodles (discard seasoning packets)
  • 4+ tablespoons Gimme K-Crisps™ Seaweed Topping, Chili Crisp

Optional

  • 2 tbsp very thinly sliced scallions
  • ¼ cup finely shredded carrot
  • Handful baby spinach or napa cabbage, thinly sliced

Instructions

  1. Boil a small pot of water then, with a slotted spoon, carefully lower eggs into boiling water.
  2. Start a timer for 7 minutes and prepare a medium bowl of ice water.
  3. Remove eggs from boiling water with slotted spoon and place immediately into ice water for about 5-10 minutes then peel.
  4. In a medium pot, add water, garlic clove, and sliced ginger then simmer 5–7 minutes to infuse.
  5. Lower the heat so it’s gently steaming and use a slotted spoon to remove garlic and ginger.
  6. In a small bowl, whisk miso with a ladle of hot broth until smooth, then stir it back into the pot along with soy sauce, sesame oil, and vinegar. 
  7. Meanwhile, cook ramen noodles (no seasoning packet) in a separate pot per package directions. Drain and divide into serving bowls.
  8. Option to add thinly sliced scallions, shredded carrot, and spinach or napa to the broth for 30–60 seconds to soften.
  9. Pour hot broth (and veggies if using) over noodles. Slice eggs in half and place on top. 
  10. Garnish with Gimme K-Crisps™ Seaweed Topping, Chili Crisp and enjoy!
